Keto Italian Pork Meatballs

Ingredients
- For the Meatballs:
- 220 grams of Ground Pork
- 2 Tbsp Almond Flour
- 1 Tbsp Parmesan Cheese
- 1 Tbsp Parsley, chopped
- 1 Egg, whisked
- ¼ tsp Garlic Powder
- Salt and pepper, to taste
- 1 Tbsp Olive Oil, for cooking
- For the Sauce:
- 1 Tbsp Olive Oil
- 2 Tbsp Onions, chopped
- 2 Garlic cloves, minced
- ½ cup canned Tomatoes, chopped
- ½ Chicken stock
- ½ tsp dried Oregano
- 1 cup Spinach
- Salt and pepper, to taste
Instructions
- Combine all the meatball ingredients in a bowl. Mix until well combined.
- Shape into meatballs size and place on a tray. Set aside.
- Heat a skillet and add olive oil.
- Place the meatballs in the skillet and cook until thoroughly cooked.
- Carefully, flip the meatballs to cook the other side. Set aside on a serving plate.
- Heat a skillet and add olive oil.
- Add and saute the onions until translucent.
- Add garlic and cook until fragrant.
- Add the tomatoes and chicken stock. Season with dried oregano.
- Add the spinach and cook until just wilted.
- Season with salt. Allow to simmer for a few minutes and set aside
